Today i want to share you all a very Good and healthy recipe especially for children. Everytime when i feel eating vegetable curry, i prefer mixed veg kadai as it will be different from other veg curries. This is very rich in flavour and also good for health as it contains all healthy vegetables. Below is the easy preparation of Kadai mixed vegetable Recipe as in Restaurant style. Enjoy it .....

1 Large carrot, peeled and cut into thin strips
1 cup Green Beans, sliced lengthwise
2 medium Potatoes, peeled and chopped into small cubes
1 cup Cauliflower, chopped into small florets (optional)
1 cup sliced Capsicum / Bell Peppers
1 cup Onions, sliced lengthwise
1 cup Tomato Puree or Canned Tomatoes (just boil 2 tomatoes in hot water for 3 minutes, remove peel & grind in blender)
1 cup Green Peas, boiled
3-4 Green Chillies, slit in the center
2 cloves Garlic, grated
1 tea spoon Ginger, grated
2 tea spoons Garam Masala (homemade or store bought)
2 teaspoons Salt (adjust to taste)
Water or Vegetable Stock, as required (around 1 cup)
3 tablespoons Vegetable or Canola Oil
handful of Chopped Coriander or Cilantro leaves, for garnish
2 tbspn coriander seeds
3-4 red chillies
cumin seeds-1 tspn
pepper corns-10-12

Procedure To Make Kadai Mix Vegetable Curry:
  • Take a pan add red chillies, pepper corns, coriander seeds, cumin seeds, eliachi, cloves, cinnamon fry for 2 mins without adding oil.
  • After 2 mins off the stove and let them cool and blend into fine powder.
  • Now take a deep kadai add 3 tbspn oil , fry onions till golden brown colour then add the blended spice powder stir well.
  • Add tomato puree, close the lid for 5 -10 mins and fry till all the raw smell goes out from puree.
  • After 2 minutes add all the vegetables one by one and stir well till all the mixture is properly mixed and add little water .
  • Let it cook till all the vegetables become soft and finally add green chillies, garam masala powder, coriander and mix well for 5 mins.
  • Now off the stove and serve hot with  rotis/Rice.

  • Do not add more water and make the consistency to be loose. if required add little tomato puree for gravy which gives rich flavour.
  • Do not add more oil.
