Ingredients :

Mutton (with bones)
500gm
Dal (chana dal/toovar dal)
2 small cups
Tamarind
1 small lemon sized
Garam masala powder
1 tsp
Green Chillies
2-3
Ginger Garlic Paste
2 tsp
Turmeric Powder
1 tsp
Coriander Leaves, Curry Leaves, Mint Leaves
4-5
Jeera Powder
1 tsp
Cardamoms
2
Cinnamon
1 stick
Coriander powder
1 tsp
Red Chilli Powder
1-2 tsp
Salt
As required
Vegetables (Onions, carrot, Tomato, Drum Sticks, shallots, Bottle Guard)
Each One (chopped/cut pieces)
oil

Cumin Seeds Powder
1 tsp
Water
1-2 cup
Whole Spices

Procedure to Make Mutton Dalcha Recipe Hyderabadi Style :

>> Before starting the cooking process, soak a handful of tamarind in water & leave it aside for 20 Mins. squeeze all the tamarind Juice into a bowl (tamarind pulp)
>> Now take a bowl and wash Dal thoroughly
>> Add turmeric powder, water and pressure cook it for 5 whistles, until it is mashed completely
 >> Now make the cooked dal into a fine paste and add tamarind Juice, salt and mix it well (Leave it aside until we make mutton curry ready)
>> Heat 3-4 Tablespoons of Oil in a Pressure Pan
>> Add Whole Spices, cloves, cinnamon and cardamoms and heat it.
>> Now add finely chopped onions, Green Chillies, Curry Leaves and saute it.
>> Heat till onion are fried in brown colour and add freshly washed Mutton.
>> Cook it on medium flame for 5 Minutes and Add Ginger garlic paste, salt, turmeric powder, red chilli powder, coriander powder and Cumin seeds powder and stir well for 5 Minutes
>> Add 2 Cups of water, handful of mint leaves.
>> Now cover with a pressure Lid and cook it for 4-5 whistles
>> Heat 3 Tablespoons of Oil a Pan and fry all the chopped veggies
>> Add salt, turmeric powder, red chilli powder and cook until they become soft
>> Once they are cooked, add all with the cooked mutton and dhal with tamarind pulp.
>> Now see whether Mutton Curry is boiled properly or Not. Add garam masala powder if required.
>> Stir well and boil it for 5 Minutes on low flame and turn off the Heat
>> Sprinkle Coriander Leaves and serve the Spicy Hot Hyderbadi Mutton Dalcha Recipe
